Papa’s Favorite:”Nugat Cake”

Papa’s Favorite “NUGAT CAKE”
Base

Ingredients:
5 Eggs
5 Tbs powdered sugar
5 Tbs flour
1 Tsp baking powder
pinch of salt
1 Tbs flour & PAM spray for baking pan
Optional ingredients:
2 Tbs Orange juice
2 Tbs Olive oil
1Tbs Seltzer

Direction:
In the mixer mix eggs, sugar & salt until you get a peak.At this point reduce the speed to minimum and add optional ingredients if you choose to make it more moist.
Then start folding in the flour mixed with baking powder.When all is incorporated pour the mixture into sprayed & floured baking pan and bake in preheated oven at 375F approximately for 45 min.Let it cool off.Check with toothpick if it’s not sticking.

Jelly or jam topping

Ingredients:
Any jelly or jam of your choice .

Direction:
Just spread it in evenly in a thin layer over cold cake base.

Walnut topping

Ingredients:
14 oz condensed sweetened milk
28 oz ground walnuts

Direction:
Just mix together & spread over first layer.

Nugat topping

Ingredients:
3 Eggs
5 Tbs powdered sugar
3 Tbs coffee liquid
3 Tbs cocoa powder
8 oz butter or Earth balance

Direction:

Premix eggs & sugar in the mixer and transfer to the bowl over steam bath constantly stirring.Mix together coffee & cocoa in a cup and add to the eggs as they start thickening.
Let it completely cool off.When cold, transfer mixture into mixer ,add butter & mix until you have nice smooth creamy texture.Pour it over walnut topping , spread evenly & place in refrigerator.

Chocolate topping

Ingredients:
4 oz dark chocolate
4 oz butter or Earth balance

Direction:
Melt chocolate & butter over very law heat constantly stirring.Let it cool off but still liquid then pour over the nugat topping in very thin layer and store in cool place.
When cutting the cake, dip the knife in hot water.
